Join me for a tour through one of Havana’s most popular paladares. In Cuba, the term "paladar" refers to a privately-run restaurant. In the last decade, a culinary culture has emerged around paladares and we will discover it together. We will visit a paladar and tour the areas learning about the strategy implemented to deal with the most common challenges of small businesses in Cuba. Then we will share lunch and talk about the evolution of this industry in recent years and the impacts on local culture.
